Pulled pork nachos

Using a cast-iron pan or other oven-safe dish, assemble the nachos layer by layer. Repeat as desired for additional layers. Bake for 8-minutes until cheese is melted and bubbling. Top with sour cream, salsa, and cilantro.

We like to slow cook pulled pork and serve it when we have guests. You never want to be that family that hosts a party and runs out of foo right? So we generally overdo it in the pulled pork cooking category and therefore, have quite a bit left over.


Nachos are easy like that. Cooled pork can be transferred to freezer bags, but be sure to leave at least an inch of space from the top.

Heat a large Dutch oven over high heat. For the pork : Preheat the oven to 3degrees F. Mix together the garlic powder, onion powder, paprika, salt and sugar in a small bowl. I had quite a bit of tender pork leftover so I shredded it instead of cooking in the slow cooker.


I sauteed the peppers and onion, then added the leftover pork , BBQ sauce, and beans. Instead of adding the cheese to the mix, I topped the nachos and pork mixture with the cheese and baked for a few minutes to melt. Spread pulled pork on top, and sprinkle with cheese. Pop it into the oven and bake for about 7-minutes, or until the pulled pork is heated through and the cheese is melted.


Let cool for a few minutes, and then sprinkle coleslaw on top. We know that some will champion the hamburg, a cut of pizza, tacos, or the all-American hot dog. But, nachos are more than just delicious. Get your grill hot, around 3degrees F. Then layer your nacho ingredients into a cast iron pan. Simple pulled pork nachos where pork is the star.

The pulled pork also makes delicious quesadillas, tacos, or sandwiches. We had a bunch of leftover pulled pork after Canada Day. Pulled pork is great to throw into other dishes.
